The Russian Osetra, considered the most intriguing sturgeon fish, with more subtle nuances of flavor, size and color in her egg than any other sturgeon. The eggs vary enormously in color, from dark grey to dark brown and gold. As the fish ages the roe fades to a light shade of amber and has a tremendously subtle flavor, described as “walnuts and cream”. Like most luxury food, caviar inspires reverence and a degree of mystery. As we grade each harvest of caviar, our caviar masters come across very small batches of truly exciting, magnificent and richly colored eggs. These we name Marky's Special Reserve. Only farm-raised sturgeon caviar is imported and sold by Optimus d/b/a Marky's Caviar company. Optimus d/b/a Marky's Caviar will not import any wild sturgeon caviar. Domestically, only sustainable paddlefish and hackleback caviar is purchased and sold by Optimus d/b/a Marky's Caviar.
