The eggs of Black American Bowfin Caviar (Cajun name "Choupique caviar") can be brownish to jet black in color and have a mildly tangy flavor. To bring out this caviar's full taste potential, it should be served along with Creme Fraiche and lemon juice. Our Bowfin Black Caviar is the finalist in the 2009 European Seafood Exposition.
